Beef and red wine stew
A big favourite for those chilly nights! You can let this slow cook for ages, the meat is lovely and tender then, I would say an hour and a half at least!
Easy homemade dumplings for stew
I have to say, we love a stew on a cold evening! This is delicious with any stew, and really is so easy. You can add a dash of mint sauce to go along with lamb, or a generous pinch of dried herbs, lovely whichever way!
Super quick vegetable stir fry
This is a great back up meal, as you can use whichever vegetables you have in and need to use up – easy to adapt to taste and also good with frozen veg. You can’t go wrong!
Banana and Nutella Cake
I really like the idea of banana and nutella together, the oaty muffin recipe is good, but to me this works better… I have tried it a few times now and was happiest with this little adaptation! You can make a big cake, or bake as individual muffins. I found that the oil makes these stay nice and moist, so they are good hot or cold.
Homemade Guacamole
This is simple, quick, fresh, healthy and delicious!! Goes well with just about anything, perfect as a dip with some crisps, and salsa!
Prawn and Sweet potato red Thai curry
A simple, and quick version of a Thai classic. You can make it as spicy as you like, and adapt the ingredients as you like. I use the sauce as a base, and just use whatever I have in. Nice and easy!
Pear and Chocolate chip cake
This was a but of an experiment, and it was absolutely delicious, probably best served cold, with dark chocolate. if you are a total chocoholic like me you could make a chocolate topping instead, or use a dessert spoon of nutella, marbelling it with yummy chocolate gooeyness!!
