Elderflower cordial
If you are going to forage and make one thing this summer, then let this be it! It is sooo easy and soooo delicious, it is well worth it. The flower heads are best picked when some of the buds are still to open, and it must be dry, never pick on a wet day as yeast begins to develop. Also, try not to pick from the roadside due to pollution, fumes etc.
This makes an absolutely delicious cordial and mixer and also is perfect drizzled over some natural yoghurt as a dessert. You can store the cordial in a fridge / cool dark place for a couple of weeks, or freeze asap.
Lemon and Hot water
This is a simple thing to do on a daily basis which offers numerous health benefits… it will kickstart your immune system, it helps to flush toxins, aids digestion and can even help with weight loss – what a way to start the day!!!
If you are not keen on the lemon and water on it’s own, add some lemon juice, or slices to a cup of weak black tea (or green tea) and you will still benefit.

Homemade Lemsips
Someone once told me about this drink and said that his mum used to give them it as the season changed, and that it would help fight off any colds and viruses. It is worth a try as it is actually really nice and full of good stuff!
