Banana and Nutella Cake
I really like the idea of banana and nutella together, the oaty muffin recipe is good, but to me this works better… I have tried it a few times now and was happiest with this little adaptation! You can make a big cake, or bake as individual muffins. I found that the oil makes these stay nice and moist, so they are good hot or cold.

Ingredients
- 5 ripe Bananas
- 2 Eggs
- 280 ml Vegetable Oil
- 400 grams Plain Flour
- 300 grams Sugar
- 1 tsp Bicarbonate Of Soda
- dash Vanilla Essence
- 2-3 tsps Nutella
Instructions
- Preheat the oven to 180c, and grease your baking tin - approx. 30 cm diameter.
- Mash the bananas in a bowl, then mix the egg and oil in a separate bowl, beat until light and fluffy. Add the sugar, flour, bicarbonate of soda and vanilla and mix well. Now add the bananas, and stir in well. Now stir the nutella through in large streaks, 1 tsp at a time, pour into your baking tray - cook for 40 minutes and check if it is cooked through. Pierce in the middle with a skewer to check and cook until it comes out clean.
- To make muffins, just use muffin cases and cook for about 15-20 minutes checking they are cooked as above.
