Another great salad, which can be a meal in itself, serve with some nice crusty bread and it is perfect. It is worth using a good olive oil and good tomatoes to make this, as that is what makes this recipe.

This is one of my favourite meals ever!! Great in the summer, as the ingredients are extra fresh and tasty, but great anytime! If you have some bread with it then it really does make a meal.

I just use shop bought puff pastry, making this really easy and quick. Always a winner with kids especially. 🙂 I let them ‘decorate’ their own and they love that! You can use whichever toppings you fancy, very versatile!!

Butternut squash Risotto

Mushroom Risotto

Gorgeous and simple and actually a lot easier than you might think! If you really want to cheat you can use normal rice cooked in stock, but obviously Risotto rice is much better! Simply add this mushroom mix in stage 4 of the basic risotto recipe.
