Moroccan Lamb meatball tagine
Slightly spicy but with a lovely sweetness from the apricots, cinnamon and lemons. Really tasty tucker!
Mango and Avocado Salsa
This is a great side to have with fish, chicken, steaks… anything really!! It really is all good stuff, so a great thing to have when you are trying to be healthy. You can make this is as spicy or even sweet as you like by varying the amount of chilli, and mango.
Sole in Mornay sauce
This is a nice easy way to enjoy fish, the sauce is delicious with this delicate fish. My mother in law introduced me to it, and it has remained a big favourite. 🙂
Easy Roux, white sauce (Bechamel sauce), and cheese sauce (Mornay sauce)
This is an easy sauce to make for so many different things, macaroni cheese, lasagne, fish pie, cooking fish… all sorts! You can freeze the roux or keep it in the fridge for a few days if you make extra too. The sauce will keep in the fridge for a couple of days too.
Easy peasy Chicken Noodle soup
A very healthy and quick soup. The noodles make it filling and you can add an egg for a bit of extra protein if you fancy that. I add a dash of sweet chilli sauce at the end and sometimes a splash of soy sauce too. I often use the leftover chicken pickings from a roast for this too. Good way to use it up, you can make the stock using the carcass too if you have the time, if you do then try adding a chilli to the stock to make this soup extra tasty.
Easy homemade blinis
These are maybe a bit more like mini savoury pancakes, but can be made with store cupboard essentials and are delicious, cheap and easy to do. Great with seafood, like crayfish in garlic mayonnaise, smoked salmon with cream cheese and prawns in marie rose sauce for example, andf of course caviar if you are feeling flush! A lovely wee anytime snack.
These freeze well too, so you can cook a batch and keep some for another occasion.
Squid and Fennel Linguini
This is a delicious and pretty healthy dinner, it is so simple to make but is absolutely delicious and tasty enough to be a treat dinner on a weekend. 🙂
Vichyssoise (Creamy Leek and Potato soup)
This is a delicious creamy soup, you can serve this cold – that is the traditional way, but to be honest I much prefer it hot with some crusty bread. THis is really simple, and easy to do, but it easily good enough to serve to guests. Enjoy.
Venison Pie
A very traditional way to enjoy a sustainable meat. Quite a rich and indulgent pie so good for a special ocassion. Serve with some boiled new potatoes and seasonal vegetables. Mmm!!!
