Slow Roasted Pork Ragu

Great Jamie Oliver recipe for using up that little bit of left over pork
Ingredients
- 2 sprigs Of Fresh Rosemary
- 2 cloves Garlic peeled and chopped
- 2 Onions peeled and chopped
- 2 Carrots peeled and chopped
- Olive Oil
- 1/2 teaspoon Dried Chilli Flakes
- 1 teaspoon Fennel Seeds crushed
- 300 grams Left Over Pork chopped into 1cm pieces
- 700 ml Passata
Instructions
- Finely chop the rosemary leaves, peeled garlic, onion and carrots and put them into a large pan on medium heat with some oil.
- Then add the chilli flakes
- Crush the fennel seeds in a pestle and mortar and stir into the pan and fry for 15 minutes.
- Cut the pork into 1cm pieces and add to the pan when the veg is soft. Fry for another 5 minutes.
- Add passatta and a splash of water. Simmer for 20 minutes or until pork breaks up and sauce is thick. You may water to add extra water as the pork breaks up.
