Homemade Lasagne
This is a big favourite of ours, if you make it yourself you know exactly what’s in it too, so it can actually be fairly healthy. It can take a bit of time to put together so make extra as it freezes well, then you have a ready made meal for a busy day. 🙂
Braised stuffed pork shoulder
This is a really economical cut of meat, which is really tasty when slow cooked. This is great served ‘family style’, in the middle of the table in a tuck in sort of way! A traditional French country recipe.
You can vary the stuffing as you like, if you want something really easy, use shop bought stuffing… Still delicious!
Sausage carbonara (linguine alla carbonara di salsiccia)
This is very tasty variation on carbonara. Getting good Italian sausages is a must. These should be available in a good supermarket.
Parmesan Aubergines (Parmigana Di Melanzane)
Classic Italian dish and a great way to serve Aubergines (eggplant). This can be served as a side dish or main.
Seared Asparagus with olive oil and balsamic vinegar
Asparagus is a great veg but can easily be overcooked. This is a perfect way to enjoy it as it stays a bit al dente.
Salmon wrapped in proscuitto with spinach, herby lentils and creme fraiche
very tasty salmon recipe a wow at dinner parties but also inexpensive enough for a weekend treat.
Slow cooked oxtail and gnocchi
Comfort food doesn’t have to be bland. If you have the time this Italian winter warmer makes dark days worth looking forward to.
Lightly spiced Red Lentil soup
A quick and tasty soup, you can vary the vegetables as you like, it is a great way to get lots of goodness though.
