Pepper & Tomato Pasta Traybake

Kids favourite that they can make themselves (11+ years)
Ingredients
- 4 Mixed Coloured Peppers
- Handful Of Cherry Tomatoes
- 2 Red Onions
- 4 Cloves Of Garlic
- Bunch Of Fresh Basil/30g
- Olive Oil
- 250g Ricotta
- 300g Rigatoni Pasta
- Splash Of Red Wine Vinegar
- 20g Parmesan
Instructions
- Preheat oven to 180c.
Deseed and finely slice the peppers.
Halve the tomatoes.
Finley slice the onions and garlic, reserve a few slices of garlic for the end.
Pick the basil leaves and set aside. Finley chop the basil stalks.
- Put everything except the remaining garlic slices and basil leaves in a large, deep roasting tray with 1tbsp of olive oil as well as a pinch of salt and pepper. Give everything a good mix.
- Make some space in the middle of the roasting tray mix.
Drain the ricotta and then place the cheese in the middle of the tray.
Scatter over the remaining garlic slices. Drizzle olive oil over the ricotta.
Put in oven for 45 mins until veggies are soft.
- Cook the pasta in lots of salted water.
- After veggie are cooked, remove the ricotta to a plate, add a splash of vinegar to the peppers and mix well.
- Add the pasta to the pepper mixture with some of the drained cooked pasta water. Toss everything together and serve with grated cheese and basil leaves.
