This is such an easy and delicious way to do fish pie. Saves time too making it great for any weekday 🙂
Ingredients
- 800 Grams Potatoes
- 1 Tbsp Sunflower Oil
- 400 Grams Cream Of Mushroom Soup Tinned
- 100 Grams Frozen Peas
- 100 Grams Sweetcorn Frozen or canned
- 100 Grams Mushrooms Wiped and sliced
- 400 Grams Fish Pie Mix
- 300 Ml Light Creme Fraiche
- 2 Tbsp Parsley
Instructions
- Peel and roughly chop the potatoes and boil in the water for 20 mins, until tender.
- Heat the oil in a frying pan and cook the mushrooms for 3-4 minutes to soften. Heat the oven to 200c, 180c fan, gas mark 6. Mix together the soup, peas, sweetcorn and cooked mushrooms, fish pie mix and half of the creme fraiche.
- Spoon the mixture into an ovenproof dish (you can cook small pots and freeze them too). Drain the potatoes, and mash with the remaining creme fraiche, and parsley. Spoon over the fish mix, fluff up with a fork and bake for 30 mins, or 20 mins if individual pots. Serve immediately.
