Sweetcorn fritters and avocado salsa
These little beauties earned me an eight of 10 on date night. There just wasn’t enough of them was the only disapointment. I make these without the flour yet you don’t have too.
Venison and chorizo casserole
This is such a delicious, warming casserole, you can easily make it into a pie, using puff pastry too. Just line a pie dish with butter, then roll out the pastry, keeping some to top the dish. Line the dish with about two thirds of the party, and fill with the casserole, top with the remaining rolled out pastry, seal the edges and prick carefully. Brush with egg and bake in the oven at 200c for about 20 minutes.
Salmon with cheesy potatoes and broccoli
This is such an easy and delicious family meal, for any day of the week. It works out at roughly £1.70 per serving which is pretty good too. Lovely with some green veg in the side.
Creamy tuna pasta
This is a quick, easy and tasty dish, covers all food groups and is very satisfying 🙂
Blackberry (bramble) and chocolate soufflé
What’s not to like… Blackberries and chocolate make a lovely combination. Perfect if you’re not sure what to do with your harvest of berries!
Beetroot and chocolate cake
This is a perfect combination, moist and light, delicious with some creme fraiche, or a wee bit of cream.
Never fail Yorkshire puddings
These are so simple and super easy to make 🙂 store cupboard ingredients too, so a great fallback with a tasty filling… A big favourite in our house!
Shortcrust pastry – made quick and easy
This is an easy pastry to put together, ideal for pies, tarts, quiches, flans etc. I do it by hand as I find it easy to do, but you can easily use a food processor, just pulse to mix adding the water little by little.
Chilli Cornbread
This is a gorgeous side dish for the pulled pork and is surprisingly easy to do! Yum!
