This is a lovely way to lighten the calories of an old family favourite. Remember not to overcook the rice, it should be plump, but still have a little bite.

This is a great way to use up leftovers too, sub in ham from the fridge, or leftover roast ham – really tasty, quite spicy if you follow the quantities, so just adapt to taste 🙂

This is such an easy and delicious family meal, for any day of the week. It works out at roughly £1.70 per serving which is pretty good too. Lovely with some green veg in the side.
One pot corned beef hash
This is such an easy one pot family meal – I use loads of veggies too to keep it pretty healthy. Use a large, wide pan though to make it easier to cook the eggs, ideally a pan with a lid.
