Onion and whiskey chutney

This is great with goats cheese in particular, in a tart or quiche, but it is also great as a side with cold meats. Good for summer picnics!
Ingredients
- 7 Red Onions Sliced
- 2 Shallots Sliced
- 1 Onion Sliced
- 1 Tsp Chilli Flakes
- 270 Ml Balsamic Vinegar
- 50 Ml Cider Vinegar
- 220 Grams Light Brown Soft Sugar
- 1 Tsp Mixed Spice
- 100 Ml Espresso Coffee
- 100 Ml Whisky
Instructions
- Put all of your ingredients into a large, heavy bottomed pot and bring to the boil.
- Stir until the sugar has dissolved, then boil for up to an hour until the onions are soft and the 'sauce' has thickened. Cool, then transfer to sterile jars.
