Easy homemade blinis
These are maybe a bit more like mini savoury pancakes, but can be made with store cupboard essentials and are delicious, cheap and easy to do. Great with seafood, like crayfish in garlic mayonnaise, smoked salmon with cream cheese and prawns in marie rose sauce for example, andf of course caviar if you are feeling flush! A lovely wee anytime snack.
These freeze well too, so you can cook a batch and keep some for another occasion.

Ingredients
- 100 grams Plain Flour
- 1 tsp Baking Powder
- 1 pinch Salt
- 1/2 cup Milk
- 40 grams Butter melted
- 2 whole Eggs
- Oil, Or Butter for frying
Instructions
- Mix the flour, salt and baking powder in a mixing bowl. Then whisk the milk and melted butter together, adding the eggs and whisking them in at the end. Now add the milk mixture to the flour mix and whisk well, until smooth.
- Heat some butter in a frying pan, and once hot add small (dessert spoon size) amounts of the batter. Cook on a medium to high heat until bubbles begin to form on the top, then turn and cook for another few minutes on the other side. Continue this process until they are all cooked and then add your favourite topping. Lovely!
