These little beauties earned me an eight of 10 on date night. There just wasn’t enough of them was the only disapointment. I make these without the flour yet you don’t have too.
Perfect lemon drizzle cake
This is such a delicious treat, but so simple to make. Most of these things are store cupboard staples too, so perfect if you just feel like rustling something up.
Coffee cake
This is an easy and delicious cake for any occasion. It is moist and light, and you can make it look very impressive.
Beetroot and chocolate cake
This is a perfect combination, moist and light, delicious with some creme fraiche, or a wee bit of cream.

This is a gorgeous side dish for the pulled pork and is surprisingly easy to do! Yum!
Skinny Chocolate cake – Half the fat, but so rich and indulgent…
As I am a total chocaholic… I have adapted a very rich chocolate cake recipe and tested with low fat spread and half fat Elmlea cream to relieve the guilt, and take the pressure off my jeans! It really is lovely, and it still tastes of total indulgence. Perfect for a special occasion – and you can decorate it as you like. :~) This would also work really well as a tray bake for a birthday, or as individual fairy cakes.
Sweet and Sour chicken balls
This is a relatively healthy, but delicious version of the classic sweet and sour chicken takeaway. I was surprised at how easy and tasty this is. It is my wife’s favourite from the local chinese restaurant, and met up to her high standards.
Oaty Banana and Nutella Muffins
These deliciously perfect muffins are a tasty and relatively healthy wee snack or pudding! We had them warm from the oven and they really were gorgeous! I made them with the kids whilst their dinner cooled, and popped them in the oven whilst we ate, so really quick and easy too. The recipe uses ripe bananas, so a great way to use any that need eaten. Enjoy!

Ginger star biscuits
Get in the christmas spirit with these tasty treats! You can decorate these and then hang them on your Christmas tree, or they make sweet little gifts. As you can see, we made all sorts of shapes, and went with a Pudsey Bear theme. 🙂
