Prawn and Sweet potato red Thai curry
A simple, and quick version of a Thai classic. You can make it as spicy as you like, and adapt the ingredients as you like. I use the sauce as a base, and just use whatever I have in. Nice and easy!
Chinese Pork tenderloin
A variation of the healthy sticky pork, still very healthy but with a few added extras. This is really quick and really tasty. Enjoy with some rice or noodles.
Caribbean Fish Curry
This is a quick to put together curry which is a bit different but I have yet to meet someone who didn’t like it. You can use any firm fleshed white fish I use haddock here but if you want to make it for a fancy dinner party you could use monkfish or halibut. Best served with rice and a garnish of coriander leaves and lime wedges.

This is a nice quick meal, great for in the week but nice enough as a weekend meal. Our kids love this, we just leave out the fresh chilli for them.
Quick Quorn curry
This is a much cheaper, delicious alternative to a takeaway. Quicker than phoning and waiting, cheaper and undoubtably healthier. We use quorn, and or seasonal vegetables.
