This is a great side to have with fish, chicken, steaks… anything really!! It really is all good stuff, so a great thing to have when you are trying to be healthy. You can make this is as spicy or even sweet as you like by varying the amount of chilli, and mango.

This is an easy sauce to make for so many different things, macaroni cheese, lasagne, fish pie, cooking fish… all sorts! You can freeze the roux or keep it in the fridge for a few days if you make extra too. The sauce will keep in the fridge for a couple of days too.

Big Tescos or Sainsbury’s sometimes have the less familiar ingredients or you can order on line from various online Mexican grocers. This is a perfect a side dish to any Mexican themed party night. I first tried real Mexican food in a brillaint restaurant in Montreal, totally understated and absolutely brilliant. Hard to track down the genuine article in the UK so why not have a try in doing it home made style.
