Aloo Gosht – Another quick curry
This is a delicious, traditional curry. It is usually made with Lamb, but we made it with some leftovers from a Sunday roast, which was gorgeous. You could also be extra healthy and just use vegetables with the potato, even subbing for sweet potatoes, which are healthier still. The great thing about curries is that you can play around with them as you like – use this as your base and you can’t go wrong!
Red Jungle Curry
A Thai curry without the coconut milk with the added bonus it’s a weightwatchers recipe.
Chinese Pork tenderloin
A variation of the healthy sticky pork, still very healthy but with a few added extras. This is really quick and really tasty. Enjoy with some rice or noodles.
Easy peasy Chicken Noodle soup
A very healthy and quick soup. The noodles make it filling and you can add an egg for a bit of extra protein if you fancy that. I add a dash of sweet chilli sauce at the end and sometimes a splash of soy sauce too. I often use the leftover chicken pickings from a roast for this too. Good way to use it up, you can make the stock using the carcass too if you have the time, if you do then try adding a chilli to the stock to make this soup extra tasty.
Squid and Fennel Linguini
This is a delicious and pretty healthy dinner, it is so simple to make but is absolutely delicious and tasty enough to be a treat dinner on a weekend. 🙂
