A simple, and quick version of a Thai classic. You can make it as spicy as you like, and adapt the ingredients as you like. I use the sauce as a base, and just use whatever I have in. Nice and easy!

This was a but of an experiment, and it was absolutely delicious, probably best served cold, with dark chocolate. if you are a total chocoholic like me you could make a chocolate topping instead, or use a dessert spoon of nutella, marbelling it with yummy chocolate gooeyness!!

I had never made meringues until today, my friend Jenny said she had this easy recipe that always works and turns out she was so right! These are lovely, a wee bit chewy in the middle and totally light and lovely on the outside! Enjoy!!

Aloo Gosht – Another quick curry

This is a delicious, traditional curry. It is usually made with Lamb, but we made it with some leftovers from a Sunday roast, which was gorgeous. You could also be extra healthy and just use vegetables with the potato, even subbing for sweet potatoes, which are healthier still. The great thing about curries is that you can play around with them as you like – use this as your base and you can’t go wrong!

A big favourite at our house, and the squid should be delicious and tender not chewy or anything as it will be nice and fresh. Really quick to make and if you get squid and freeze it, it can be a quick rustle up store cupboard treat too.
I have put this in as a starter, but it can easily be a main dish too, we often make enough that it is our main meal.
