Cream of Courgette Soup

Delicious, warming and tasty cream of courgette soup. Good thing about this soup is that ingredient amounts are flexible and can be easily adjusted to taste or quantity.
Ingredients
- 4-5 Large Courgettes 0r 6-7 small ones
- 1 Large Onion
- 4 Cloves Of Garlic
- 2 Pints Chicken Stock Vegetable stock can be substituted for veggies.
- 1/2 Cup Chopped Parsley
- 1 Small tub Single Cream Can use double cream or increase amount to suit taste
- 1 Pinch Salt to taste
Instructions
- Roughly chop the courgettes, the onion and the garlic
- Place the chopped courgettes, onion and garlic into a soup pot containing the chicken stock and bring to the boil.
- Add most of the parsley leaving enough as a garnish for serving.
- Allow to simmer for 20/25 minutes until the vegetables are cooked.
- Either pulp the vegetables with a hand held liquidiser or transfer to a liquidiser, pulp and then transfer back to the pot.
- Add the cream, salt and pepper and heat through again to taste. Try not to boil!
- Garnish with the remaining parsley and serve with crusty bread.
