Crisp yet moist cake, perfect with a cup of tea
Ingredients
- 100 grams Dates, stoned and chopped
- 1/2 teaspoon Bicarbonate Of Soda,
- 1/2 Rind Of Lemon, finley grated
- 100 ml Tea, hot
- 40 grams Butter, unsalted
- 70 grams Light Muscovado Sugar
- 1 small Egg
- 125 grams Self Raising Flour
- 25 grams Walnuts finely chopped
Instructions
- Preheat oven to 180oc/350oF/ gas mark 4.
Grease and line a loaf tin.
- Place the dates, bicarbonate of soda and lemon rind in a bowl and add hot tea. Leave to soak for 10 minutes until softened.
- Beat the butter and sugar together until light and fluffy, then beat in the egg. Stir in the date mixture.
- Fold in the flour using a large spoon, then fold in walnuts.
Spoon mixture into prepared tin and place in the oven.
- Bake for 35-40 minutes ,or until risen and golden brown.
Cool for 10 minutes on a wire rack.
