Venison and chorizo casserole

This is such a delicious, warming casserole, you can easily make it into a pie, using puff pastry too. Just line a pie dish with butter, then roll out the pastry, keeping some to top the dish. Line the dish with about two thirds of the party, and fill with the casserole, top with the remaining rolled out pastry, seal the edges and prick carefully. Brush with egg and bake in the oven at 200c for about 20 minutes.

Caribbean Fish Curry

This is a quick to put together curry which is a bit different but I have yet to meet someone who didn’t like it. You can use any firm fleshed white fish I use haddock here but if you want to make it for a fancy dinner party you could use monkfish or halibut. Best served with rice and a garnish of coriander leaves and lime wedges.
