This is such an easy and delicious crowd pleaser. Perfect for entertaining a big group. You could easily make this with a salmon fillet, just serving with the sauce. Tasty and simple!

This is such an easy and delicious crowd pleaser. Perfect for entertaining a big group. You could easily make this with a salmon fillet, just serving with the sauce. Tasty and simple!

  1. Wash the fish and place in a fish kettle, cover with water then add the onion, carrot, sliced lemon, bay leaves and peppercorns. season with salt and then place on the hob, bring to the boil on a high heat, then lower and simmer for 5 minutes. Then leave the fish to cool in the kettle with the lid on - it will continue to cook as it cools.
  2. Whilst the fish cools chop half of the dill, and mix with the mayonnaise and capers. Squeeze 2 wedges of lemon into the mayonnaise mix, season well and set aside.
  3. Transfer the fish to a large serving plate, remove the skin - the flesh will flake easily when cooked, now decorate the whole fish with cucumber, the remaining dill and with watercress on the side. Serve with the caper and dill mayonnaise.
  4. This is delicious with a side salad and new potatoes.
