Vichyssoise (Creamy Leek and Potato soup)

This is a delicious creamy soup, you can serve this cold – that is the traditional way, but to be honest I much prefer it hot with some crusty bread. THis is really simple, and easy to do, but it easily good enough to serve to guests. Enjoy.

This is a delicious creamy soup, you can serve this cold - that is the traditional way, but to be honest I much prefer it hot with some crusty bread. THis is really simple, and easy to do, but it easily good enough to serve to guests. Enjoy.

  1. Melt the butter in a heavy bottomed pan, and add the onion, garlic and leeks - cook gently until soft. Add a generous splash of white wine, and cook for a further 2 minutes before adding your potatoes. Give it all a good stir, then add the stock and season to taste.
  2. When the potatoes are soft liquidise, then add the milk. If you are serving chilled then place in the fridge now, and garnish with the cream and herbs when serving. If you would prefer this warm, then warm through gently and again, add the cream and herbs just before serving. Either way this is a winner!
