Vegetarian Shropshire Fidget Pie

A lovely country pie. Great for a winter night. Easy to make and all veggie.

  1. Sift the flour and salt into a bowl. Add butter and rub in with fingertips. Work in the mashed potatoes to form a firm dough. Chill as you prepare the filling. Layer the sliced potatoes, apples and sausages into a pie dish. Season with salt and pepper and then add the sugar between the layers. Pour on the stock. Roll out the pastry to just larger than the pie dish and trim. Dampen the edge of the dish with water and lay the pastry trimmings strips on it. Brush with water. Lay the pastry lid on top and press down around the edges. Knock up and flute with the back on the knive. Make a small hole through the pastry. Brush with beaten egg. Bake in a preheated oven at 200oc for 15 minutes and the reduce to 180oc and bake for another 45 minutes.
