Tricolore (ish) Salad

This is a very tasty Italian style salad. Ideally served on warm sunny days with friends and a few bottles of white wine, but delicious enough to be served all year round and put a smile on people's faces whatever the weather


  • 1 pack Parma Ham Let's not be precious you can use Serrano ham or British wind dried ham etc in whatever quantities you like
  • 2 large & ripe Avocados sliced as evenly as possible
  • 4 medium & ripe Plum Tomatoes Again any type of nice tomato is a great substitute. Sliced evely again.
  • 2 Large balls Mozarella this is where you should spend your money and get the best that is on offer in your supermarket, or grocer. Slice evenly to match the other ingerdients
  • 1 large bunch Basil leaves separated
  • 1 drizzle Extra Virgin Olive Oil
  • 1 drizzle Balsamic Vinegar again use a decent bottle
  • 1 tsp Sea Salt Flakes
  • 1 twist Black Pepper


  1. slice the avocados, mozzarella and tomatoes as evenly as possible
  2. Tear the ham in to small bite size pieces
  3. Get a salad platter and arrange alternate slices of the ham, a basil leaf, a slice of tomato, a slice of avocado and a slice of mozzarella. repeat and continue until these ingredients are used up and/or yoiu have a complete circle round your salad platter
  4. Sprinkle on the salt & pepper anddrizzle over the olive oil and the balsamic vinegar. Serve with some nice crusty bread eg ciabatta and a couple of glasses of white wine (if your in the mood).
