Tortilla Wrap Pizza Tower

Made this tonight as we had some wraps to use – the kids demolished it, and it was really quick and simple. You can use whatever you fancy to fill it – tomato pasta sauce, garlic mushrooms, beef, chilli, chicken… anything you like! I used a tomato, red onion, basil and lentil filling along with the cheese.

Made this tonight as we had some wraps to use - the kids demolished it, and it was really quick and simple. You can use whatever you fancy to fill it - tomato pasta sauce, garlic mushrooms, beef, chilli, chicken... anything you like! I used a tomato, red onion, basil and lentil filling along with the cheese.

  1. Gently fry your onions and garlic for a few minutes in a little oil. Then add the tomatoes, lentils, basil, water, stock and balsamic vinegar. Let this all simmer for about 20 mins, until the lentils are soft. Preheat your oven to about 180c whilst this cooks.
  2. Place a tortilla wrap on a baking tray, coat evenly with the 'topping' of your choice and add a layer of cheese. Then add another tortilla and repeat, and another. For the last one, add just a thin coating of sauce, and then top with plently of cheese. Roast in the oven for about 15 mins, until the cheese is all melted and slightly golden. Really tasty!
