Tomato pasta sauce

Great as a base, add anchovies, olives and chillies for Puttanesca, or basil for a tomato and basil, add chillies for a spicy arrabiata and of course it's perfect for a homemade pizza base!



  1. Heat your oil gently, and peel your garlic cloves – no need to chop. Fry them gently pushing them against the side of the pan and turning them until they are soft. They should not discolour. Then remove the garlic, mush with a fork and set aside.
  2. Now add your onions to the pan, and your herbs, allow to cook until soft. Then add your tomatoes, and return the garlic to the pot too.
  3. Add your tomato puree, balsamic vinegar is a good add in too, now if you wish, allow everything to simmer gently for about 10-15 mins, add water regularly to keep the sauce from drying – this also brings out the sweetness of the tomatoes as they cook and cook. You can cook this gently for up to an hour, adding water as and when needed.
