The tastiest roast chicken ever!

If you think roast chicken is boring then once you have tasted this twist on a classic you'll change your mind for ever. This never fails to get all our family happy to sit down together for a great Sunday lunch.



  1. Rinse your chicken inside and out with water and pat dry with a kitchen towel
  2. Chop the parma ham and mix with the butter the garlic, the oregano and thyme leaves and the lemon zest. Season lightly
  3. Gently put your fingers between the skin and the breast flesh and gradually work two pockets, taking care not to tear the skin.
  4. Insert generous portions of the butter mix into each of the pockets you have hollowed out. Rub any left overs on the top of the skin and into the cavity of chicken.
  5. Slash the thighs wih a knife to ensure the chicken cooks as evenly as possible.
  6. Stuff the zested lemon halves into the cavity of the chicken along with any left over herbs. Sprinkle the top of the chicken with Smoked Paprika and season
  7. Cook the chicken depending on weight whch should be about 90 mins at 180oC for a 1.5 kg bird. Skewer with a fork to check the juices run clear then serve with a selection of roast root veg eg Parsnips, potatoes and celeriac and a green like spinach
