We made this for our comic relief cake off, it disappeared super fast! :) Delicious, moist and light... what more could you ask for?!

  1. Preheat the oven to 180c, grease and line the base and sides of a square or rectangular loaf tin.
  2. Put the sugar in a mixing bowl, add the oil and eggs, and stir together, then stir in the grated carrot, raisins and orange zest, now add the flour, bicarbonate of soda and spices, stir in carefully.
  3. Once mixed together, pour it into the tin and bake in the oven for about 45 minutes.
  4. Whilst it is baking, make the icing / frosting. Beat the icing sugar, butter, vanilla essence, and cream cheese together by hand (or with a medium-slow speed) until the mixture comes together and is well mixed. Mix slowly and gently until the icing is light and fluffy, don't overbeat or it might go to runny.
  5. Cool in the tin for 5 minutes, then turn it out, peel off the paper and cool on a wire rack. (You can freeze the cake at this point.) Now top with your icing and serve! WARNING! Delicious - prepare to indulge yourself!!! :)
