Thai Green Curry

Great sauce, perfect for any occassion - use chicken or prawns, or quorn for a vegetarian version



  1. Season chicken and leave in bowl. Heat oil in wok. Add Ginger, Garlic and onion to wok and soften, a few minutes.
  2. Add Chicken to wok and stir in green curry paste. Brown chicken.
  3. Pour in coconut milk, soy sauce, fish sauce and bring to boil reduce to simmer then add courgettes, chilli, kaffir lime leaves , lemon grass, green pepper and palm sugar. Simmer for 25-30 mins
  4. Add lime juice, taste and adjust seasonings and/or sugar as necessary. Add coriander and stir. Remove lemon grass and kaffir lime leaves. Serve with rice or noodles of your choice and garnish with lime wedges and coriander.
