This is such a tasty dish, an absolute favourite of mine, great to freeze too.

  1. Slice the steak as finely as you can, Heat the oil in a large non stick frying pan and fry the steak on all sides until nicely browned.
  2. Stir in the curry paste, fish sauce, ginger and kafir lime leaves. Cook for a further minute, then add the coconut milk, sugar, lime zest and juice. Add 400ml water, and bring to the boil.
  3. Add the beans, reduce the heat to a simmer and cook, covered, for about 20 mins, striking occasionally. Remove the lid, add the cherry tomatoes and cook, uncovered for about 5 mins. Garnish with the coriander and serve with the rice,
