This is a really tasty accompaniment to an Indian meal, or it is delicious as an easy and cheap supper with some chapati. This recipe would serve 4 people as a main course.

  1. Put the lentils In a heavy based pan, add 900ml water and bring to the boil. Turn down to a simmer, and cover with a lid, allow to cook for approx 30-40 mins, until the lentils are tender. Stir regularly to prevent the lentils sticking.
  2. While the lentils cook, heat the oil in a heavy bottomed frying pan, add the cumin seeds and fry gently for about 1 minute. Add the onions, chilli and ginger and stir well. Cook for another 5 mins until soft.
  3. Blend the garlic and tomatoes to a paste, then add to the frying pan with the onion mix, stir well then add the remaining spices. Season to taste and cook for about 10-15 mins.
  4. Once the lentils are cooked, gently whisk them to break them up. Now add the tomato, onion and spice paste and mix well. If the sauce is too thick, add a little water, if you find there is too much water just remove the lid and allow the sauce to reduce.
  5. Season, sprinkle with chopped coriander and serve with a dollop of natural yoghurt. Gorgeous!
