These prawns are delicious in this chilli and tomato sauce.

  1. Season the prawns with a pinch of salt, then add the egg white and dust with cornflour.
  2. Heat the oil in a wok or pan, add the prawns, stirring to keep them separate, and deep fry for about 30 seconds. Remove for the wok and drain oil away, keep back a tablespoon for the next stage.
  3. Over a high heat stir fry the onions, garlic and ginger for a few seconds, add the prawns and stir fry for a further minute. Add the wine, tomato purée and chilli sauce, stirring until the sauce is well blended.
  4. Arrange the lettuce leaves on a plate and pour the prawns and sauce into the centres, serve immediately. Delicious!
