These little beauties earned me an eight of 10 on date night. There just wasn’t enough of them was the only disapointment. I make these without the flour yet you don’t have too.

Sweetcorn fritters and avocado salsa

These little beauties earned me an eight of 10 on date night. There just wasn't enough of them was the only disapointment. I make these without the flour yet you don't have too.

  1. In a bowl combine three quaters of the sweetcorn with the egg, flour, baking powder, half the spring onions, half the chilli and half the coriander. Season.
  2. Then blitz half the mixture with a blender, combine with the rest of the mixture and set aside as you make the salsa.
  3. Dry-fry the remaining corn until lightly charred. Tip into a bowl and add the remining spring onion, chilli and corainder. Stir in the avocado, red pepper and lime juice. Season.
  4. Heat the oil in a frying pan. Add one tbsp of the mixture to make a fritter. Repeat with all the mixture. Serve with salsa and soured cream.
