Very easy salad to make that doesn't require lots of attention.



  1. Preheat oven to 200oc fan. Place the sweet spud and red onion into a roasting tin. Drizzle with 1 tbsp of the olive oil and scatter oven the cumin seeds. Toss together and roast for 25 - 30 minutes when spuds cooked and onion is caramelised. Make the dressing by whisking together the remaining oil with the vinegar, honey and mustard. Place spinach on 4 plates and sprinkle over the cucumber. Spoon the roasted spuds and onions on top. Then scatter the mackerel and finally drizzle over the dressing
