Stovies – The perfect Scottish Stew
This is comfort food at it’s best!!! We had this at our wedding reception, and we usually have a big pot of it on the stove on Hogmonay for folk to help themselves too, great party food! This is also great for leftovers, you can use cooked meat, leftover gravy, and leftover veg from a Sunday Roast – so nothing is wasted!

This is comfort food at it's best!!! We had this at our wedding reception, and we usually have a big pot of it on the stove on Hogmonay for folk to help themselves too, great party food! This is also great for leftovers, you can use cooked meat, leftover gravy, and leftover veg from a Sunday Roast - so nothing is wasted!
Ingredients
- 3 medium Onions sliced
- 50 grams Fat lard or other animal fat is best
- 400 grams Beef stewing beef, cut into chunks
- 3 cups Water
- 3-4 tsp Gravy Granules or you can use a tring stock instead
- 2 pinches Salt
- 3/4 tsp Pepper
- 1 pinch Nutmeg generous
- 2 whole Carrots peeled and chopped
- 1/2 Turnip peeled and chopped
- 2 cloves Garlic put in whole is fine -they will melt away anyway - this is optional, but I love garlic!
- 1 kg Potatoes peeled and chopped
Instructions
- Add the fat to a pot (suitable for hob and oven) and then cook the onions. Now add the beef and spices, salt and pepper, and stir for a minute, then add the water, and gravy granules, stir well again.
- Now add the vegetables, and bring gently to a simmer. Cook on a low heat for approx 30 mins. Preheat the oven to 150c, and slow cook for 2-3 hours (stirring now and again and adding water if it seems to be drying out). Everything should be cooked through and nice and soft and mooshy! Taste for seasoning, and serve with some pickled beetroot and oatcakes! Perfect for a cold wintery night.
