Stir fried spinach

A great side dish.

  1. Wash the spinach well and remove the stems.
  2. Heat the wok over a high heat, add the oil and when very hot add the garlic and salt, stir fry for 10 secs. Add the spinach and stir fry for about 2 mins, until the leaves are coated with the garlic and salt.
  3. When the spinach has wilted to about a third add the sugar and stir fry for another 4 mins, transfer to a plate and pour off any excess liquid. Serve immediately.
