This is one of my favourite ever puddings, it’s so easy to make too. A real crowd pleaser which is easily good enough for a dinner party.

This is one of my favourite ever puddings, it's so easy to make too. A real crowd pleaser which is easily good enough for a dinner party.

  1. Preheat the oven to 180c, then sit the chopped dates in the water and bicarbonate of soda, mix well and leave for 10 mins. Grease and line your tin, square preferably.
  2. Meanwhile in a clean bowl cream the butter and sugar together until light and fluffy. Still stirring, add the eggs slowly and mix in well. Now, still stirring, add the flour gradually, then add the date mixture and mix well. Now pour the mixture into your tin and bake in the oven for 35-40 mins, until golden and risen. It should feel springy to touch, not too soft.
  3. To make the sauce Melt the butter in a thick bottomed pan, then add the sugar, vanilla and cream and stir well, simmer for 5 mins.
  4. To serve, cut the sponge into pieces and pour over the hot toffee sauce. Delicious!
