This is a delicious and very moist cake for any occassion. Good for a cup of tea, and good in a lunchbox, also good warm with some ice cream as a dessert.

  1. Preheat your oven to 180c, and grease your baking tin - approx 20-30cm. Peel, core and then chop your apple into chunks (discard the core and peel).
  2. In a mixing bowl whisk up your vegetable oil and eggs until nice and frothy. Add the sugar, flour, cinnamon, bicarbonate of soda, salt and vanilla and give it all a good stir. Lastly stir in the apples, then pour into the baking tin.
  3. Bake for approx 30 mins, until nice and golden. Enjoy hot or cold. :)
