Sri Lankan gin sling

A delicious indulgent cocktail thrown together with ingredients in my fridge in lieu of tonic!

Ingredients

  • 1 Measure Gin
  • Half Pomegranate Fresh! But you can freeze them in advance and use to chill.
  • 1 Lime Fresh
  • Cup To taste Lemon Grass Tea Make a pot with dried lemon grass and boiling water and let it go cold
  • 1 To taste Sugar Or Sugar Syrup

Instructions

  1. Make a pot of lemon grass tea!( I know this is not a regualar store cupboard ingredient but any old herbal tea will do) Leave to go cold, or freeze as ice cubes
  2. Squeeze the lime
  3. Half the pomegranate and hold cut side down in your hand over a bowl. Bash the seeds and the juice out with a wooden spoon. If you want to prepare this In advance, freeze the seeds.
  4. Combine all the ingredients. Sweeten to taste.
  5. Enjoy in theTropical sunshine, or by the fire, and eat the seeds! Half drink, half dessert.
