This is a delicious and pretty healthy dinner, it is so simple to make but is absolutely delicious and tasty enough to be a treat dinner on a weekend. :)

  1. Clean and slice your squid into rings after all of your veg is sliced and prepared. Now heat some olive oil in a large heavy bottomed pot, or large frying pan. Add the chopped fennel, garlic, and crushed fennel seeds. Fry on a medium heat for a few minutes, then add the wine, and chilli and squid and turn up the heat. Keep stirring, and keep it moving about until the liquid has reduced by about half.
  2. Now turn the heat right down and cook your pasta as per instructions. Season your sauce now to taste, and once the pasta is cooked, drain in a colander, reserving a little bit of the water. Take off the heat and mix the squid mixture and pasta together in the large pot, adding the leafy tops of the fennel (if you have them), and parsley, and a really good glug of extra virgin olive oil. Mix everything well, and sprinkle with the lemon zest to serve. I know we shouldn't, but we often have parmesan with this too!!!! Healthy and delicious. Enjoy.
