Split Pea soup

A delicious broth which is high in fiber and full of goodness. A perfect winter warmer :)

Ingredients

  • 1 tbsp Olive Oil
  • 2 large Onions chopped
  • 2 med - large Carrots peeled and chopped
  • 2 sticks Celery chopped
  • 2-3 cloves Garlic finely chopped
  • 1 cup Yellow Split Peas rinsed and drained
  • 1 cup Split Green Peas / Green Lentils rinsed and drained
  • 1.8 litres Vegetable Stock Chicken stock can also be used, bouillon is great though

Instructions

  1. In a large pot , heat olive oil gently. Cook onion, carrot, celery and garlic until onion is translucent. Stir in yellow and green split peas, stock and seasoning (you can always add a bay leaf too). Cover, bring to a boil, then reduce heat and simmer 2 1/2 hours, stirring regularly. Puree with a blender or food processor (remove the bay leaf first if you added one). Return to pot, heat through, and serve.
