A tasty winter warmer to use up some left over pumpkin or just a use any fresh squash

Ingredients

Instructions

  1. Fry Shallots, garlic, ginger and chill's.
  2. When soft add squash, fry slightly and then add stock.
  3. When cooked and squash is soft, blend.
  4. When blended add coconut milk, lime juice and coriander.

    I was just going to post something very similar. I’ve just eaten my token Sri Lankan pumpkin lantern! Made him into a soup.
    I added 2 green chillies and fresh curry leaves and rampe( because everything in Sti Lanka has those in!)
    And then grated Parmesan over the top.
    Absolutely delicious.
