Spicy bean soup

Quicker to throw together than going to the shops! The great thing about this is that you can make this according to what you need to use up - anything goes!

Instructions

  1. Saute your onion, garlic, ginger and whichever vegetables you fancy. Nothing needs to be chopped very finely as it will be blended at the end. Add the spices of choice now and fry for a couple of minutes
  2. Add your beans and stir well, now add enough water to just cover everything, add your bouillon and simmer until all veg is soft – approx 10-15 mins.
  3. Then blend and enjoy with some juicy, buttery toast.
