Really easy, quick to make and delicious! Best served with salad, pittas, minty yoghurt and a dash of spice.

  1. Mix the lamb, onion, garlic and spices in a large bowl with it hands until everything is mixed thoroughly. Season well. Now shape into 12 long, fairly thin shapes. You can keep these in the fridge for up to 24 hours, or freeze.
  2. Heat the olive oil, on a medium heat and fry for about 15 minutes until browned and cooked through. Or, you can sear them in a vey hot pan, finishing them in the oven (about 220c) for about 10 mins. Let them cool and you can push a skewer through to give a professional finish. Garnish with some fresh mint, and lemon wedges. Enjoy.
