Spiced apples and pears

This is a deliciously different way to enjoy some fruit, particularly nice in the autumn months. You can have it with a bit of cream, Ice cream or the healthier option of crime fraiche. Mmm mmm!



  1. Peel and core the apples and pears then cut the apples into quarters, and the pears in half. Add the sugar to a non stick pan and start to heat it over a high heat until it begins to caramelise. Then add the spices and the butter. Give it an little stir around.
  2. Add the fruit and let it cook for 5-10 mins until they caramelise evenly. Turning in the sauce. Add a splash of the brandy, careful as it may flambé!! Then add the apple juice and let it bubble and reduce to a syrup like sauce.
  3. Plate up the fruit then pour over the sauce, serve with cream, ice cream, creme fraiche or in its own. Yummy!!
