Slow Roasted Pork Ragu

Ingredients

Instructions

  1. Finely chop the rosemary leaves, peeled garlic, onion and carrots and put them into a large pan on medium heat with some oil.
  2. Then add the chilli flakes
  3. Crush the fennel seeds in a pestle and mortar and stir into the pan and fry for 15 minutes.
  4. Cut the pork into 1cm pieces and add to the pan when the veg is soft. Fry for another 5 minutes.
  5. Add passatta and a splash of water. Simmer for 20 minutes or until pork breaks up and sauce is thick. You may water to add extra water as the pork breaks up.
