As I am a total chocaholic… I have adapted a very rich chocolate cake recipe and tested with low fat spread and half fat Elmlea cream to relieve the guilt, and take the pressure off my jeans! It really is lovely, and it still tastes of total indulgence. Perfect for a special occasion – and you can decorate it as you like. :~) This would also work really well as a tray bake for a birthday, or as individual fairy cakes.

As I am a total chocaholic... I have adapted a very rich chocolate cake recipe and tested with low fat spread and half fat Elmlea cream to relieve the guilt, and take the pressure off my jeans! It really is lovely, and it still tastes of total indulgence. Perfect for a special occasion - and you can decorate it as you like. :~) This would also work really well as a tray bake for a birthday, or as individual fairy cakes.

  1. Preheat the oven to 160c, line your 24cm round tin with greaseproof paper.
  2. Place the chocolate and butter in a heatproof bowl and sit in a pan of gently simmering water to melt. Once done, remove from the heat and set aside to cool off.
  3. Whisk your egg yolks, adding the sugar and vanilla extract and whisk until pale and thickened. Add the cooled chocolate and butter, mix until combined. Add the flour, almonds and baking powder and fold gently.
  4. Whisk the egg whites in a separate bowl until you have stiff peaks, and gently fold into the cake mix a spoonful at a time. Now pour the mix into your tin and bake for an hour, you can check it is cooked through by piercing with a skewer - if it comes out clean it is done, if not give it another 5 mins or so. Once baked let it cool in the tin before removing.
  5. Now for the topping - Place your three ingredients in a heatproof bowl over a gently simmering pan of water, mix gently until it has all melted together, spread the topping over the top and sides and then decorate as you like!
  6. You could also make little fairy cake versions of this - use the little cake cases and just bake for about 10-12 mins. Top just as before and decorate - gorgeous!
