This is an easy one pot dish, perfect for a meat free meal! You can adapt the vegetables to suit your own tastes :)

This is an easy one pot dish, perfect for a meat free meal! You can adapt the vegetables to suit your own tastes :)

  1. Preheat the oven to approx 180 (fan oven)-200c, put the veg in a large roasting tin, drizzle with olive oil and mix well to coat the veg. Roast for 40 mins, until almost tender.
  2. Whilst the veg cooks, mix the ingredients together for the marinade in a shallow bowl. Now add the tofu and coat in the marinade - cover and set aside for now.
  3. Spoon the tofu and marinade over the vegetables and roast for further 10 mins. Sprinkle with the spring onions and enjoy!
