A really simple and tasty way to enjoy a salmon fillet
Ingredients
- 2 Tbsp Olive Oil
- 2 Tbsp Sugar
- 2 Tbsp Mustard Powder Heaped tbsp
- 4 Salmon Fillets
Instructions
- Heat the oven to 180 c, line a baking tray with parchment / baking paper
- Heat 1 tbsp. oil in a large frying pan over medium heat. Mix 1 tbsp. sugar and 1/2 the dry mustard on a plate. Dip in half the fish, coating both sides. Add to pan and cook, the pan should sizzle, 2 minutes per side or until golden brown (coating may get a bit charred).
Transfer to baking sheet. Repeat with the rest of the oil, fish, mustard and sugar.
- Bake for 6 to 8 minutes until salmon is nicely browned on the outside and a juicy coral inside. Remember, it will continue to cook after it comes out of the oven. Serve with some fresh veg, rice or cous cous are good with it too. Lovely!
